Cupid’s Cardio and Homemade Dressing

Happy MLK Day! Today started off slow because I had the day off from work. There is no better feeling than going through your Sunday routine, preparing for the week then realizing you have Monday off!

I started the morning off with a waffle with almond butter, 1/2 of a banana and some strawberries.

After my light breakfast I headed to the gym. I wanted to get in at least three miles but I wasn’t in much of a running mood. I decided to do the first half of Cupid’s Cardio from the Tone It Up girls, Karena and Katrina. They have some great workouts that can be altered to fit our particular needs.

For the first set of intervals I set the treadmill to an incline of 0.5 and jogged at 6.0. For the FAST section I ran at 7.0 and for the jog/walk section I jogged at 5.5. I was going to stop after 30 minutes but after walking at 4.0 for a few minutes I was energized enough to complete the second interval section 🙂

I did 30 seconds of sprints at 8.0 with no incline and walked at 4.0 with 1% incline. I was super sweaty after finishing Cupid’s Cardio and I will definitely do it again. I usually don’t eat much before going to the gym in the morning but I am glad I did before this particular workout. I think I helped me to push on.

I was quite hungry when I got home and whipped up a quick and easy salad with buffalo chicken tenderloins.

I also have been loving making my own dressing for salads lately and made this quick and easy one today.

1 T red wine vinegar
1 t olive oil
A dash of fresh cracked black pepper
A dash of garlic salt

Mix all four ingredients together then shake it all together and pour right on your salad. So easy.
