What I Ate Wednesday

I guess this is “What I Ate Tuesday” but I can’t really talk about what I am eating today because I am only one meal in. I eat just about the same breakfast and lunch everyday so really, 2/3rds of this post is “What I Ate Wednesday.”

Breakfast

Pre gym, I take my vitamins and supplements. I take a multivitamin, calcium, biotin and an Omega-3.

Post gym, I am usually really hungry. My go-to breakfast is two Eggo® Nutri-Grain® waffles with almond butter and a cup of Caramel Apple Spice tea. Now that I have a solid morning routine its just easier (and more cost effective Iv’e found) to have the same thing every day. I am sure there will come a day where I change it up but for now loving my breakfasts.

Calorie Count: 325 (I have been counting calories using MyFitnessPal not to lose weight but to keep an eye on nutrients and because it’s interesting!)

AM Snack

By 10:30 I am usually starving. Today I had 1/2 of grapefruit and three slices of cracked pepper turkey. There is usually a cup (or two) of coffee happening around this time as well.

Lunch

Pretty much everyday I have a big salad with any and everything I can find to add in. This salad was a beast. Baby kale, baby spinach, baby carrots, cherry tomatoes, mushrooms, broccoli slaw and sweet potatoes. I also throw in a piece of boneless, skinless chicken thigh that was left over from dinner on Sunday night.

I also had my current favorite dressing on the salad: Briana’s Real French Vinaigrette (note the empty bottle).

PM Snack

On the train home I munched on my second snack of the day, my favorite trail mix from Whole Foods, Berry Bounty. This has almonds, cranberries, raisins, cashews, blueberries, walnuts and raspberries. Yum!

Dinner

Turkey Burger Sliders! This was a fun meal to make. I got the inspiration for these from a recipe in my inbox from Blue Apron. My version omitted a few ingredients, substituted a few ingredients and added a few ingredients so basically they were nothing like the Blue Apron version. They were the Emily’s Full Plate version!

I had two sliders on an onion ciabatta roll (one roll cut in half), with a mini baby kale salad and steamed asparagus with a drizzle of garlic olive oil on the side.

Calorie Count: 485

Calorie wise, my day came to just under 1,400 calories with 50% being from carbs, 25% from protein and 25% from fat. The MyFitnessPal app is awesome for tracking everything from calories to cholesterol to calcium!

1,400 calories is a little light for me, especially for a day when I did two work outs (4 mile run in the AM and Barre class after work). But I never felt starving so I listened to my body and ate what I felt was right.
