A Beautiful Weekend in Words and Pictures

Hello and happy Monday. May the 4th be with you!

I’m actually not a huge Star Wars person but I figured I would roll with it because its trending and I am #basic.

This is going to be a fun week with lots of interesting first time things going on but before we get to that, let’s throw it back to the weekend.

Although the weekend didn’t officially start until Friday after work, I wanted to share this amazing turkey burger I had for lunch with a few of my favorite co-workers.

The weekend started with a cleaning frenzy in out house in preparation for having people over on Sunday. We ordered pizza and watched the Red Sox lose to the Yankees 😦

Saturday started with a trip to Tendercrop Farm. I am a big fan of shopping local ad have been making an effort to eat more locally sourced organic meat.

Before shopping I said hello to a goat, two llamas and a chicken.

After shopping, my wallet cried but it was all worth it.

We celebrated the glorious spring weather outside and the Derby.

Sunday was glorious. I treated myself to a massage. #yolo #treatyoself And it was the first shorts day of the year!

Then SL and I got use out of our resident beach pass and spent an hour or so walking the beach. Toes in sand = happy girl!

Post-walk I was HUNGRY. I whipped up a veggie-filled orzo salad and SL manned the grill and cooked up a ton of buffalo chicken wings that I bought from the farm.

My nearly non-existant sweet tooth kicked in after dinner and I whipped up some Nutella cookies. They came out square. I suck at baking.

But they were delicious and I ate 2 while watching Game of Thrones. Is anyone else watching GOT? I feel like its jsut starting to get good!

Here is the recipe if you want to try your hand at being a shitty baker like me.

Ingredients

  • 1 egg
  • 1/4 cup almond butter
  • 3/4 cup Nutella
  • 1/2 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • pinch of sea salt (optional)
  • 1/2 cup white chocolate chips
  • 1/2 dark chocolate chunks

Directions

  1. Mix first egg, almond butter, Nutella, brown sugar and vanilla in a mixer until smooth.
  2. Mix in flour, baking soda and salt until a large dough ball forms.
  3. Stir in white chocolate chip and dark chocolate chunks until incorporated.
  4. Scoop tablespoon sized balls on to parchment lined baking sheet.
  5. Bake at 350 degrees for 9 minutes, turning baking sheet after 5 minutes.

If your cookies miraculous don’t come out square, let me know your secret!

Weekend in Vermont: Eats and Activities

SL and I went away this weekend and it was glorious! My number one goal for the weekend was to relax and have fun. That said, I YOLOed real hard in the food department. Hard enough break my weekend down into two blog posts!

Friday – Dinner at Worthy Kitchen

We chose Worthy Kitchen for dinner on the recommendation of our inn keepers (more on them tomorrow). SL had seen this place on the drive into town and we were excited to give it a try. Worthy totes itself as a farm diner with upscale but affordable diner (no, I didn’t mean dinner) menu with all local ingredients. I knew we were in the right place when we walked in and it was packed! Always a good sign for a place with no table service. What? No table service? Yes! At Worthy you walk in, put your name on the wait list (because there will be one) and we can either get in the drink line or hop right in the food line.

Per the hostesses recommendation, we hopped in the short drink line to have a beverage in hand while waiting in the longer food line. This worked perfectly because right before it was our turn to order, the hostess let us know our table was ready.

SL ordered the Corned Beef Melt and I went with Buttermilk Friend Chicken (again). Like I said, I YOLOed hard this weekend. We also ordered a pickle vegetable plate which had pickled everything, including grapes. The pickled grapes tasted, well, like you would think a pickled grape would taste.

After devouring our meals and another round of drinks we left Worthy Kitchen stuffed and header back to the inn. Upon arrival there was a lovely display of pound cake, sliced strawberries and whipped cream. No part of me was hungry but I made a little plate of cake and strawberries and headed up to our room.

Saturday – Breakfast, Skiing and The BEST Pizza

Staying at B&B/Inns in the BEST because of breakfast. Where we stayed had FULL cooked, amazing breakfast each morning. Upon arrival, I was asked if I had any food allergies (which I don’t) and I mentioned I am mostly dairy free but not allergic.On the breakfast menu Saturday was baked oatmeal and quiche and the inn keepers graciously made my scrambled eggs and bacon.

I didn’t take a picture of mine because scrambled eggs aren’t as pretty as SL’s baked oatmeal and quiche. And of course, there was coffee. After fueling up SL and I headed to Pico Mountain to spend the day on the slopes.

We skied all day then stopped by the Long Trail Brewery on the way back to the inn. It was PACKED so we didn’t stay long. But in case anyone was living under a rock and didn’t know what beer is made of, here you go. You’re welcome.

After a quick shower and change of clothes SL and I headed out for an early dinner at Pi Brick Oven Trattoria. I continued my YOLO streak and ordered the Paisano pizza. This pie came with Sopressata, local Italian sausage, bacon and oregano and it was EVERYTHING! It as easily in my top 5 best pizza every and I have eaten a lot of pizza.

Note: Yes, I am mostly dairy-free. I only eat cheese on pizza. Yes, pizza is my favorite food. Get over it.

I made SL try a piece and he LOVED it too. Loved it enough to have another piece and still finish his entree. I was impressed.

The night ended on a high note with freshly baked chocolate chunk cookies when we arrived back at the inn. I grabbed one, and then I grabbed another for good measure. Then I grabbed some mini eggs and my life (or at least my night) was complete.
