Pesto BLT Pasta Salad

I love bacon. Lettuce and tomatoes are good too. And so is pesto. And I love pasta. I know, it gets a bad rap and everyone is supposed to eat “zoodles” or quinoa noodles and what not but I’m not quite ready (doubt I’ll ever be) to ditch pasta completely.

I bought a basil plant while grocery shopping a couple weeks ago and it has been thriving so I knew I had to make pesto and figured I’d use in for an epic creation for last night’s dinner.

Enter my newest creation, Pesto BLT Pasta Salad.

BLT Pasta Salad

Serves 4-6 depending on if you eat it as a side dish or a main dish

Ingredients:

  • 1/2 lb. (half of a box) of pasta, try using a fun shape because well, its fun!
  • 2 T pesto, store bought or make your own like I did*
  • 1/2 lb. sliced bacon, cooked until crisp, chopped
  • 1 cup cherry tomatoes, halved
  • 3-4 cups of crispy lettuce, chopped (I used romaine because its what I had, arugula would have been awesome in this too)

Directions:

  1. Cook pasta to your desired doneness, drain and let cool slightly.
  2. Meanwhile, make your pesto (or get it out of the fridge).
  3. Stir pesto into pasta until coated.
  4. Add bacon, tomatoes, and lettuce to the pasta mixture and toss.
  5. Serve immediately or refrigerate for 30 minutes and serve chilled.

*My pesto recipe1 1/2 cups basil, 3 T pine nuts, 3 T olive oil, 1-2 cloves of garlic (depending on size and how much you like garlic), 1/4 t course sea salt. Add to processor and process until smooth. I don’t like cheese so I do not add parmesan to y pesto. Fell free to add to your if you want. Just take an educated guess on how much. This makes roughly 3-4 T of pesto which is more than you need for the recipe but there’s nothing wrong with left over pesto. Use it to top salads or spread on sandwiches.

I hope you guys like it as much as SL and I did.  I bet this would be delicious over a bed of baby spinach or kale for a healthy(ish) quick lunch. Note: Bacon becomes healthy(ish) when mixed with lettuce and tomatoes in my book 🙂

Boston Love & Frosty Hack

One year ago today those of us in Boston and many around the world heard the news of the terrible and tragic bombing at the finish line of the historic Boston Marathon. I was out running errands that afternoon and immediately headed home once I heard the news and was glued to the TV for the rest of the evening hoping for an answer as to why this happened. Nothing.

Although the tragedy could not be explained, it took Boston all but a moment to pull together and react. I was so proud of my city and all of the people in it on that day and that week and the weeks and months to follow. Boston Strong is an understatement. Its more like Boston WICKED Strong!

And now back to business…

I love finding recipes with ingredients that I have in my kitchen. Buying things just to use for one recipes kills me my food budget. I came across this recipe on Pinterest this weekend and had to try it.

I was a huge Frosty lover in my fast-food eating days (high school)! My go-to order was a dollar menu extravaganza consisting of a 4-piece chicken nugget, small frie, small chili and a Frosty. I just did the calculation and that little meal of mine packed 920 calories!! OMG…thank god that phase of my life is over.

I still would love to have a Frosty now and then so when I found this gem I was excited to try it. Here is the recipe I used which is posted on SnackHacks.org.

– 3/4 cup almond milk (I used Silk Unsweetened Vanilla)
– 1/2 teaspoon vanilla
– 1-2 teaspoons cocoa powder
– 1/3 banana
– 15 ice cubes

I tried to blend this beast and it was a no go. My poor blender couldn’t handle all of the ice cubes. I added more almond milk and tried to crush the ice with the ice crusher function. Still a no go.

I got really frustrated and gave up, settling for an icy drink.

FAIL! Fail, fail fail. It didn’t look, feel or taste like a Frosty.

Looks like I will have to head to Wendy’s for a Frosty or find a brand new recipe and start from scratch. I had some high hopes for this one…oh well. Can’t win them all!
