chia mousse = whipped chia pudding = super easy breakfast or dessert!
I love the idea of chia pudding but sometimes I really just can’t handle the consistency. I whipped up (bad pun intended) my first batch of whipped chia pudding a few days ago and loved every bit of it but I knew I could make it better.
Enter my very own Chocolate Almond Coconut Chia Mousse!
- 2 T chia seeds
- 3/4 cup Silk Dark Chocolate Almondmilk (any flavor would work…do what you like)
- 1 T almond butter (or any other nut butter)
- 1 T slivered almonds
- 1-2 T coconut flakes
- 1 packet truvia (optional, I added for a hint of sweetness)
- Mix everything in a container with a lid (mason jars work well)
- Refrigerate for 3-4 hours or overnight if you have the time
- Add pudding to a blender and blend on a low to medium-low speed. I used the “whip” setting on mine and blended for about a minute.
- Serve with sliced fruit if you want or just devour it plain
I ate this for breakfast this morning on another hotasballs day. But I am not complaining because I’ll take 80 degrees over 8 degrees any day! Now time to get to work and get through this Tuesday!
It’s here…Friday! Actually Wednesday, Thursday and today have all felt like Friday to me due to my weird week. This morning started out a little differently than I thought it would. I woke up SO SORE form yesterday’s new-to-me workout. I wanted to spin or run but I’m going to put it off until this afternoon. Hopefully I can convince SL to do a little run with me 🙂
For breakfast, I tried something new and I am instantly obsessed.
Whipped Chia Pudding! I got this idea from Sarah’s recent post. I love the idea of chia pudding but I can always handle the weird texture. I will post this recipe soon! It’s may become a new summer staple in my life. I paired my whipped chia pudding with a Southern Pecan coffee in an Eeyore mug that is NOT MINE…it’s SLs!

I have been loving this stuff lately. I first tried it at the end of the Twin Lobster Half Marathon but guzzled it so quickly that I didn’t get to fully enjoy it. Since then, I have tried both the watermelon and blackberry flavors and LOVE LOVED them both. I can’t wait to try all of the other flavors!

I need a little motivation when running, especially when I’m on solo runs. Running near my house is not scenic so I try to make the short drive to the next town over and run along the ocean. It’s so much easier to push through a 5-mile when when you are caught up gazing out into the Atlantic Ocean.
So there they are, the things I’ve been loving this week. Now its off to enjoy my day off and get ready for the weekend! SL turns the big 3-0 this weekend and the weather is looking great so lots of outdoor activities are planning!
